🥪 Green Goodness Panini — Spinach, Tofu & Feta
Looking for a quick, healthy lunch or lunchbox idea that’s packed with greens and protein? This Spinach, Tofu & Feta Panini is my easy go-to meal. It’s light, flavourful, and comes together in under 15 minutes — perfect for busy weekdays!

🌿 Ingredients
- 1 cup fresh spinach leaves
- ½ block firm tofu, crumbled
- 1–2 tsp olive oil (or butter if you prefer)
- 1 small onion, finely chopped
- A pinch of salt
- A pinch of black pepper or garlic powder
- 2 tbsp feta cheese, crumbled
- Bread or panini of your choice (multigrain, sourdough, or sandwich bread)
- (Optional) Chilli flakes 🌶️ — if you like a spicy kick
👩🍳 Method
- Sauté Spinach: Heat a pan and add spinach (no oil needed). Sauté until wilted, then remove and set aside.
- Cook Onion & Tofu: In the same pan, add a tiny drizzle of olive oil. Add chopped onion with a pinch of salt and sauté until soft. Add crumbled tofu and mix well. Sprinkle black pepper or garlic powder. Cook for a few minutes until lightly golden, then turn off the heat.
- Combine Everything: Add the sautéed spinach and crumbled feta cheese to the tofu mixture. Mix well to combine.
- Assemble the Sandwich: Cut or prepare your bread/panini. Spread the filling evenly. Grill or toast until golden and crisp.
- Serve: Enjoy it warm — crispy outside, soft and cheesy inside. For extra flavor, add butter before grilling or chilli flakes for spice!
💡 Tip:
This mix also works great as a filling for wraps or pita pockets for a quick lunchbox meal.
