๐Ÿงบ Ingredients

  • 1/2 cup sugar

  • 1/2 cup butter (softened, not melted)

  • 1/2 tsp cardamom powder

  • 1/4 tsp baking soda

  • 1 tsp curd (yogurt)

  • 1 cup refined flour

  • Almonds and pistachios, finely chopped or slivered (as required)

๐Ÿ‘ฉ‍๐Ÿณ Method

  1. Prepare Powdered Sugar:

    • Add sugar to a mixer grinder and grind until you get a fine powder.

    • Sieve the powdered sugar into a large mixing bowl.

  2. Cream the Base:

    • Add butter, cardamom powder, baking soda, and curd to the bowl.

    • Using a whisk or spatula, mix well until light and fluffy.

  3. Add the Flour:

    • Sieve the refined flour into the butter mixture.

    • Mix gently using a spatula, then bring it together with your hands to form a soft dough.

๐Ÿ’ก Do not knead the dough—just gather it until it holds shape.

  4. Shape the Cookies:

    • Take small portions of the dough and roll them into smooth balls.

    • Gently press them down to flatten slightly.

    • Arrange on a parchment-lined baking tray, keeping 2–3 inches of space between each cookie.

  5. Add the Toppings:

    • Press slivered almonds and/or pistachios on top of each cookie.

  6. Bake:

    • Bake in a preheated oven at 170°C (340°F) for 12–14 minutes, or until light golden brown.

  7. Cool & Serve:

    • Remove from the oven and let them cool completely on a wire rack.

    • Once cool, store in an airtight container.

๐ŸŒŸ Tips & Variations

  • For extra richness, add a pinch of saffron strands to the dough.

  • Replace refined flour with whole wheat flour for a slightly denser but wholesome version.

  • You can also flavour them with rose essence or vanilla instead of cardamom.
