🌽 Crispy Baked Corn Ribs (Easy, Healthy & Crowd-Pleasing Snack)

There’s something incredibly comforting about corn. It’s simple, nostalgic, and almost always a crowd-pleaser. I made these corn ribs on a whim, and honestly, they disappeared within seconds. The kids loved them, and the adults kept going back for “just one more.”

This is one of those recipes that looks fancy, feels fun to eat, but is actually super easy to make. Perfect for parties, evening snacks, movie nights, or even a light guilt-free treat when you’re craving something crunchy.

What I love most about this recipe is how flexible it is. You can make it spicy, tangy, buttery, or keep it completely light and healthy. I chose a low-calorie version this time—without any butter or oil—and it still tasted amazing. But if your heart says butter or olive oil, go for it. Food is about joy, balance, and listening to your taste buds.

  • Crispy on the outside, juicy inside

  • Baked, not deep-fried

What Are Corn Ribs?

Corn ribs are corn cobs cut lengthwise into quarters, seasoned, and baked or air-fried until they curl slightly and turn crispy. They’re fun to eat, easy to serve, and a great alternative to fried snacks.

Ingredients:

  • Corn cobs (as many as you want – they disappear fast!)

  • Paprika (or red chilli powder if you like it spicy)

  • Black salt (or normal salt / pink salt)

  • Garlic powder (optional)

  • Juice of 1 lemon

  • Optional: butter or olive oil

  • Optional spices: chaat masala, peri peri spice, or any seasoning you love

Method:

  1. Clean the corn cobs and boil them until slightly tender.
This step makes cutting the corn much easier and safer.

  2. Once boiled, let them cool a little. Carefully cut each corn into 4 long pieces. These are your “corn ribs.”

  3. In a bowl, mix:

    • Paprika

    • Black salt

    • Garlic powder

    • Lemon juice

If you’re using butter or olive oil, add it now.
I skipped oil and butter this time because I was watching my calories, and honestly, it tasted just as good without them.

  4. Coat each corn rib generously with the spice mixture.

  5. Line a baking tray with baking paper and place the corn ribs on it.

  6. Preheat your oven at 180–200°C for 5 minutes.

  7. Bake:

    • Fan-forced mode for 10 minutes

    • Then switch to Grill mode for 5 minutes
until you see those beautiful slightly burnt and crispy spots.

That’s when you know they’re perfect.

Serving Ideas:

Serve them hot and fresh. They taste amazing on their own, but if you’re in the mood to indulge, try them with:

  • Peri peri mayo

  • Garlic aioli

  • Cheese sauce

  • Or any dip you love

I skipped the sauce this time, but I still remember how delicious they tasted with peri peri mayo and garlic aioli at an office party. Absolutely addictive!

Are These Corn Ribs Healthy?

When baked without butter or oil, corn ribs make a light and satisfying snack. Corn naturally provides fibre and energy, and baking instead of frying keeps the recipe much lighter. You can easily adjust the seasoning to suit your dietary preferences.

Storage & Reheating Tips

  • Best enjoyed fresh and hot

  • If needed, refrigerate leftovers for up to 1 day

  • Reheat in the oven or air fryer to bring back crispiness

  • Avoid microwaving, as they may turn soft
