This Date & Nut Sooji Halwa is a rich, nourishing dessert made with semolina, almond flour, dates, ghee, and dry fruits. Naturally sweetened with dates and delicately flavoured with saffron, this halwa is perfect for festive occasions or when you’re craving something indulgent yet wholesome — no refined sugar needed.

🛒 Ingredients

Main Ingredients

  • Sooji (Rava / Semolina) – 1½ cups

  • Almond flour – 1 cup (optional, see notes below)

  • Dates (seedless, soaked) – 1½ cups packed
    (about 20–22 dates, depending on size)

  • Ghee – 1½ cups
    (for a lighter version, use ½–¾ cup, but full quantity gives the best taste)

  • Milk – 1 to 1½ cups, as required
    (can substitute with almond milk, oat milk, or water)


Dry Fruits

  • Mixed dry fruits – ¾ cup, chopped
    (walnuts, cashews, almonds, raisins)


Flavouring

  • Saffron – 8–10 strands


Optional Sweetener

  • Coconut sugar – 1–2 tsp (optional, only if you prefer extra sweetness)


👩‍🍳 Step-by-Step Method

Step 1: Roast the Dry Fruits


  • Heat 1 tsp ghee in a pan.

  • Lightly roast chopped nuts and raisins until aromatic.

  • Remove and set aside.


Step 2: Prepare the Dates



  • Remove seeds from soaked dates (if not already seedless).

  • Chop ¼ cup dates and keep aside.

  • Grind the remaining dates along with their soaking water into a smooth paste.


Step 3: Roast Semolina & Almond Flour

  • In a heavy-bottom pan, add all the ghee and let it melt on low–medium heat.


  • Add semolina and roast, stirring continuously, until it turns aromatic and lightly golden 


  • Add almond flour and sauté for 2–3 minutes, mixing well.


Step 4: Add Dates & Cook





  • Add chopped dates and date paste.

  • Mix well; the mixture will become thick.

  • Gradually add milk to loosen the mixture and make it smooth.

  • Cover and cook for 5 minutes, stirring frequently to avoid sticking.


Step 5: Finish with Nuts & Saffron




  • Add roasted dry fruits and saffron strands.

  • Mix gently until well combined.


Step 6: Rest the Halwa



  • Switch off the flame.

  • Cover the pan and let it rest for 20 minutes.

  • This resting time helps flavours deepen and texture set perfectly.

📝 Notes & Variations

  • Almond flour adds richness and a nutty flavor, but it is completely optional.

    • Replace it with ¾ cup cashew powder, or

    • Use ½ cup milk powder for extra creaminess, or

    • Use ½ cup finely ground desiccated coconut for a mild coconut flavour.

  • Adjust milk quantity based on how soft or thick you prefer the halwa.

  • Dates provide natural sweetness; if you like it sweeter, add 1–2 tsp coconut sugar.
