🌶️ Quick & Easy Pressure Cooker Mutton / Goat Curry (So easy that even beginners can cook it!)

I usually stay away from mutton curry because heavy masalas tend to give me stomach pain and a burning sensation. But this mutton curry is a complete game changer. It’s light, gentle on the stomach, and still packed with beautiful flavours. No heaviness, no discomfort – just a comforting and satisfying meal.

This is my go-to mutton curry when I want something quick, simple, and wholesome. There are no fancy ingredients and no complicated steps. Everything comes straight from your kitchen. Just mix, pressure cook, and your delicious curry is ready. It’s perfect for busy days and ideal for beginners who want a foolproof recipe.

I’ve used lean goat meat with no fat because I’m currently watching my calories. If you’re not on a weight-loss journey, you can definitely choose slightly fatty mutton for a richer taste and more indulgent flavour.

📝 Ingredients (for 1 kg mutton/goat):

  • Mutton / Goat: 1 kg

  • Oil: 1 tsp (you can use up to 2–3 tbsp if not calorie-conscious)

  • Onions: 2 medium, thinly sliced

  • Ginger garlic paste: 2 tbsp

  • Bay leaf: 1 (optional, skip if not available)

  • Kashmiri red chilli powder: 2 tsp
(use spicy chilli powder if you like more heat)

  • Turmeric powder: ½ tsp

  • Coriander powder: 2 tsp

  • Garam masala or Meat masala: 1½ tsp

  • Salt: 2 tsp (or to taste)

  • Lemon juice: 1 lemon

  • Hot water: 1 to 1½ cups (as per gravy consistency)

Optional whole spices (only if you like):

  • 4–5 peppercorns

  • 2 green cardamoms

  • 1 small cinnamon stick
(I usually skip these because I don’t like biting into whole spices while eating.)

👩‍🍳 Method:

  1. Heat your pressure cooker and add 1 tsp oil.
Add bay leaf (and whole spices if using).

  2. Add sliced onions and sauté until they turn light pink or golden.

  3. Add 2 tbsp ginger garlic paste.
Sauté on low flame for 5 minutes, stirring continuously so it doesn’t burn.

  4. Add all spice powders:

    • Red chilli powder

    • Turmeric

    • Coriander powder

    • Garam masala / Meat masala

    • Salt

Add 2–3 tbsp hot water and cook the masala for 1 minute till aromatic.

  5. Add the 1 kg mutton and mix well.

  6. Add lemon juice and mix again. This helps tenderise the meat and enhances flavour.

  7. Add 1 to 1½ cups hot water, depending on how thick or thin you want the gravy.

  8. Close the cooker lid and cook on low flame for 4 whistles.
(Every cooker is different, so adjust if needed.)

  9. Once pressure releases naturally, open and check:

    • If soft and cooked → Enjoy!

    • If not → Cook for 1–2 more whistles.

🍽️ Serve with:

  • Bhakri

  • Chapati / Roti

  • Naan

  • Steamed rice

💡 Tips:

  • For weight loss: follow exact oil quantity and do portion control 😉

  • For richer taste: add more oil and use slightly fatty meat

  • Beginners friendly: this recipe is very forgiving and always turns out good
